Panchmel Dal

Ingredients

  • 2 tbsp bengal gram dal chana dal
  • 2 tbsp green gram dal moong dal
  • 2 tbsp pink lentils masoor dal
  • 2 tbsp pigeon peas spilt and skinned tuvar dal
  • 2 tbsp black gram urad dal
  • 2 green cardamoms
  • 2 cloves
  • 1 green chili chopped
  • 2 kashmiri red chilies broken
  • ½ inch ginger crushed
  • ¼ cup onion chopped
  • 1 to mato chopped
  • ½ tsp cumin seeds
  • ¼ tsp turmeric powder
  • ½ tsp garam masala
  • ¼ tsp asafoetida powder
  • 1 tsp ghee
  • 1 tsp salt
  • 2 tbsp coriander chopped

Instructions

  1. Rinse and soak the dals in water for 30 mins.
  2. Drain the water and add 2 cups of fresh water, pressure cooks the dals for 4 to 5 whistles or till they are completely cooked.
  3. Mash the dal and keep aside.
  4. Heat ghee in a pan and add cumin seeds, cloves, cardamoms, and red chilies.
  5. Once they splutter add the ginger, asafoetida and green chili and fry them till the raw aroma of ginger goes away.
  6. Add onions and saute till they get soft and translucent.
  7. Add the tomatoes, turmeric, salt and garam masala and fry the masala till the tomatoes become soft and mushy.
  8. Add the dal and mix well.
  9. Simmer the dal for 10 mins so the flavors of the spices infuse well with the lentils.
  10. Garnish the dal with coriander leaves and serve hot.
