Chicken Shami Kebab

Ingredients

  • 1/2 cup chana dal chickpeas Soaked overnight
  • 500 gm chicken cubes boneless
  • 4 dry red chili whole
  • 1 tsp cumin seeds
  • 1 tsp coriander whole
  • 3 cloves
  • 5 black peppercorn
  • 1- inch cinnamon stick
  • 1/2 tsp carom seeds ajwain
  • 1 tsp salt
  • 1/4 tsp turmeric
  • 1 egg
  • 2 tbsp coriander leaves chopped
  • 1 tbsp mint leaves chopped
  • 2 green chilies chopped
  • 1- inch ginger roughly chopped
  • 5 cloves of garlic chopped
  • 2 tbsp ghee

Instructions

  1. Heat 1 tbsp ghee in a kadai and add the whole spices and let them splutter.
  2. Add ginger garlic and saute till the raw smell disappears.
  3. Add the chicken, salt, and turmeric and saute for 2 mins.
  4. Then add coriander, mint, green chilies and chickpeas and saute for more 10 mins.
  5. Add 2 cups of water and boil the mixture till the chicken and chickpeas are cooked and the water is evaporated.
  6. Allow the mixture to cool down completely.
  7. Then add the egg and grind the mixture to a smooth paste.
  8. Wet your hands and make round shape kebabs of the mixture.
  9. Pan fry the kebabs in the remaining ghee.
  10. Serve hot with mint chutney and onion rings.
