- ½ tsp lemon juice
- ½ tsp ginger-green chilli paste
- 1 tsp salt
- 1 cup water
- 1 tsp fruit salt

- ¼ cup corns semi-crushed
- ¼ tsp red chilli powder
- ½ tsp salt
Soak chola dal in 3 cups water for overnight or around 8 hours.
In a separate bowl, mix all the ingredient listed under "Stuffing mixture" and keep it aside.
Chop a bunch of spinach leaves once you ready to make idlis.
Grind soaked dal, chopped spinach, lemon juice, ginger-green chilli paste, salt, water and make a smooth paste.
Half fill idli steamer with water and heat the water.
Once you are ready to steam the idlis, add the fruit salt in a mixture and mix it well.
Grease the idli moulds with a drop of oil and add a spoon full of batter.
Now add a small spoon of the stuffing mixture. Add a spoon full of batter again.
Steam the idlis for 10 mins or until they are cooked.
Serve hot with onion or tomato chutney and sambhar.
JOOSyTip: Don't add too much of stuffing mixture, over-stuffing will spoil the texture of idli.
