Paneer Kuska Biryani
Ingredients
- 2 tbsp ghee
- 1 bay leaf
- 1 inch cinnamon
- 3 pods cardamom
- 1 star anise
- 5 cloves
- ½ tsp fennel
- 1 tsp cumin
- 1 onion finely chopped
- ¼ cup curd
- 200 gms paneer cubes shallow fried
- 1 tsp ginger garlic paste
- 2 green chilli slit
- ¼ tsp turmeric
- 1 to mato finely chopped
- ½ tsp kashmiri red chilli powder
- 1 tsp biryani masala
- 1 tsp salt
- 2 tbsp mint finely chopped
- 2 tbsp coriander finely chopped
- 1 cup brown rice cooked
Instructions

In a pan heat ghee and saute whole spices.

Add onion, ginger garlic paste and green chilli and saute till onions gets translucent.

Add tomato and saute till the tomatoes turn soft and mushy.

Now add turmeric, chilli powder, biryani masala and salt, saute on low flame till it starts to stick to the pan.

Add 1/4 cup water and let the spices cook.

Add whisked curd and saute till the curd combines well without curdling.

Add mint, coriander, paneer and mix well.

Spread the rice evenly on top of the gravy, cover and let it simmer for 5 mins on a low flame so the rice will soak in all the flavors.
