Multiflour Idli


  • 1/4 cup urad dal
  • 1/2 tsp fenugreek seeds
  • 1/4 cup bajra flour
  • 1/4 cup jowar flour
  • 1/4 cup ragi flour
  • 1/4 cup whole wheat flour
  • 3/4 tsp salt

For serving

  • Inji Thongal Chutney


  1. Combine urad dal and fenugreek seeds in a bowl and soak it in enough water for 2 hours.
  2. Drain and blend in a mixer jar till smooth using 1/2 cup of water.
  3. Transfer the mixture into a deep bowl, add bajra flour, jowar flour, ragi flour, wheat flour, salt, 3/4 cup of water and mix well.
  4. Cover with a lid and keep aside to ferment overnight.
  5. After fermentation, mix the batter well once again and pour a spoonful of batter into greased idli moulds.
  6. Steam in an idli steamer for 10 minutes or till they are cooked.
  7. Repeat with the remaining batter to make more idlis.
  8. Serve immediately with chutney.
